Ingredients

  • 180 grams unsalted butter
  • 100 grams almond meal (ground almonds)
  • 75 grams plain (all-purpose) flour
  • 200 grams powdered sugar (icing sugar)
  • 5 large egg whites
  • 1 teaspoon vanilla extract
  • 150 grams mixed fresh berries (such as blueberries, raspberries, or chopped strawberries)
  • 2 tablespoons powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 12-hole friand or muffin tin well with butter or nonstick spray.

Step 2

Melt the butter in a small saucepan over low heat until completely liquid. Allow it to cool slightly while preparing the other ingredients.

Step 3

In a large mixing bowl, sift together the almond meal, plain flour, and powdered sugar. Stir to combine.

Step 4

In a separate bowl, lightly whisk the egg whites until frothy but not stiff. This can be done by hand with a fork or whisk—no need for an electric mixer.

Step 5

Make a well in the center of the dry ingredients and pour in the frothed egg whites, melted butter, and vanilla extract. Gently fold the mixture until just combined, being careful not to overmix.

Step 6

Spoon the batter evenly into the prepared friand or muffin tin holes, filling each about 3/4 full.

Step 7

Distribute the fresh berries evenly across the tops of the batter in each tin, slightly pressing them into the mixture.

Step 8

Bake in the preheated oven for 18–20 minutes, or until the friands are golden brown on top and a skewer inserted into the center comes out clean.

Step 9

Allow the friands to cool in the tin for 5–10 minutes before carefully turning them out onto a wire rack to cool completely.

Step 10

Once cooled, dust the friands with powdered sugar before serving.
