Ingredients

  • 2 medium raw beetroot
  • 1 cup cooked quinoa
  • 0.5 cup rolled oats
  • 0.25 cup chickpea flour
  • 1 small onion
  • 2 minced garlic cloves
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by peeling the beetroots. Grate them using a box grater or a food processor until you have fine shreds.

Step 2

Finely chop the onion and mince the garlic cloves. Heat one tablespoon of olive oil in a pan over medium heat.

Step 3

Add the chopped onion and minced garlic to the pan. Sauté until the onion becomes soft and translucent, about 3-4 minutes.

Step 4

In a large mixing bowl, combine the grated beetroot, cooked quinoa, sautéed onions and garlic, rolled oats, chickpea flour, cumin powder, and coriander powder.

Step 5

Chop the fresh parsley finely and add it to the mixture. Season with salt and black pepper to taste.

Step 6

Mix all the ingredients well using a spoon or your hands, ensuring everything is evenly combined.

Step 7

In the same pan, heat the remaining tablespoon of olive oil over medium heat.

Step 8

Shape the mixture into equal-sized patties. You should have about 4 patties from this mixture.

Step 9

Place the patties in the hot pan. Cook each side for about 6-8 minutes, turning them gently halfway through, until they are golden brown and cooked through.

Step 10

Once cooked, remove the patties from the pan and let them drain on a paper towel briefly before serving.

Step 11

Serve the beetroot patties warm as a burger filling, or enjoy them on their own with a side salad.
