Ingredients

  • 2 pounds beef stew meat
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons sweet paprika
  • 0.25 teaspoon cayenne pepper (optional)
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 0.5 cup sour cream
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 1 pound egg noodles or mashed potatoes (for serving)

Directions

Step 1

Season the beef with salt and pepper. Sprinkle the flour over the beef and toss to coat evenly.

Step 2

In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium-high heat.

Step 3

Working in batches, brown the beef on all sides. Remove the beef and set aside.

Step 4

Lower the heat to medium and add the diced onion to the pot. Sauté for 5-7 minutes, or until softened.

Step 5

Stir in the minced garlic, sweet paprika, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.

Step 6

Add the beef broth and tomato paste to the pot. Stir well to combine and scrape up any browned bits from the bottom of the pot.

Step 7

Return the browned beef to the pot. Bring the mixture to a simmer, then reduce the heat to low.

Step 8

Cover and cook for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.

Step 9

Remove the pot from the heat. Stir in the sour cream until fully incorporated, creating a creamy sauce.

Step 10

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 11

Serve the Beef Paprikas hot over egg noodles or mashed potatoes. Garnish with fresh parsley if desired.
