Ingredients

  • 200 grams rice noodles
  • 250 grams beef sirloin, thinly sliced
  • 3 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 large eggs
  • 100 grams bean sprouts
  • 4 stalks green onions, sliced
  • 50 grams roasted peanuts, crushed
  • 1 whole lime, cut into wedges
  • 3 tablespoons fish sauce
  • 1 tablespoon tamarind paste
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 0.5 teaspoon red chili flakes (optional)

Directions

Step 1

Soak the rice noodles in hot water for 10-15 minutes until softened, then drain and set aside.

Step 2

In a small bowl, mix together the fish sauce, tamarind paste, soy sauce, and brown sugar until the sugar is dissolved. Set aside.

Step 3

Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Add the sliced beef and stir-fry until browned and cooked through, about 2-3 minutes. Remove the beef from the pan and set aside.

Step 4

In the same pan, add the remaining tablespoon of oil and the minced garlic, stirring for about 30 seconds until fragrant.

Step 5

Push the garlic to one side of the pan and crack the eggs into the other side. Scramble the eggs until they are just set, then mix with the garlic.

Step 6

Add the drained noodles to the pan and pour over the sauce mixture. Toss everything together to combine well.

Step 7

Return the cooked beef to the pan and add the bean sprouts, stirring for another 2-3 minutes until the vegetables are just tender.

Sprinkle the sliced green onions and crushed peanuts over the noodles and toss again.
