Ingredients

  • 1 pound Beef sirloin
  • 0.25 cup Soy sauce
  • 1 tablespoon Brown sugar
  • 1 tablespoon Sesame oil
  • 3 cloves Garlic
  • 1 tablespoon Fresh ginger
  • 4 cups Beef broth
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Rice vinegar
  • 8 ounces Dried ramen or udon noodles
  • 2 cups Baby spinach
  • 1 large Carrot
  • 2 Green onions
  • 0.25 teaspoon Red chili flakes
  • 1 Lime
  • 0.25 cup Cilantro (optional)

Directions

Step 1

Thinly slice the beef sirloin against the grain and place it in a bowl.

Step 2

In a separate small bowl, mix soy sauce, brown sugar, sesame oil, 2 minced garlic cloves, and half of the grated ginger. Pour this marinade over the beef, cover, and refrigerate for at least 15 minutes.

Step 3

While the beef marinates, prepare the vegetables. Peel the carrot and julienne it. Slice the green onions into thin rounds and set everything aside.

Step 4

In a large pot, heat a tablespoon of sesame oil over medium heat. Add the remaining minced garlic and grated ginger, and sauté for 1 minute until fragrant.

Step 5

Pour in the beef broth and bring it to a gentle boil. Stir in the oyster sauce, rice vinegar, and red chili flakes. Lower the heat to let the broth simmer gently.

Step 6

In a separate pot, cook the noodles according to the package instructions. Drain and set aside.

Step 7

In a skillet or wok over high heat, sear the marinated beef for 1-2 minutes until just browned. Remove from heat and set aside.

Step 8

Add the baby spinach and julienned carrot to the broth. Simmer for 2-3 minutes until the vegetables are slightly tender but still vibrant.

Step 9

Divide the cooked noodles into 4 serving bowls. Ladle the hot broth and vegetables over the noodles.

Step 10

Top each bowl with the seared beef slices, green onions, and optional cilantro.

Step 11

Squeeze fresh lime juice over each bowl before serving for a bright finish.
