Ingredients

  • 2 pounds beef chuck
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons cooking oil
  • 6 cloves garlic, minced
  • 1 large onion, chopped
  • 6 ounces tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 3 medium potatoes, peeled and cubed
  • 2 large carrots, sliced
  • 1 large green bell pepper, chopped
  • 1 large red bell pepper, chopped
  • 1 can liver spread
  • 1 cup cheddar cheese, grated
  • 2 tablespoons hot sauce
  • 1 cup green peas

Directions

Step 1

Season the beef chuck with salt and black pepper. Set aside.

Step 2

In a large pot, heat the cooking oil over medium-high heat. Add the beef in batches to avoid overcrowding and brown on all sides. Remove from the pot and set aside.

Step 3

In the same pot, add the minced garlic and chopped onion. Sauté until the onion is translucent and the garlic is aromatic.

Step 4

Stir in the tomato paste and cook for 2-3 minutes, allowing it to blend with the garlic and onion.

Step 5

Return the browned beef to the pot. Pour in the beef broth and add the bay leaves. Bring the mixture to a boil.

Step 6

Reduce the heat to low, cover, and let it simmer for about 1.5 hours, or until the beef is tender.

Step 7

Add the cubed potatoes and sliced carrots to the pot. Continue to simmer for 10-15 minutes, or until the vegetables are tender.

Step 8

Stir in the chopped green and red bell peppers. Cook for another 5 minutes.

Step 9

Blend in the liver spread and let it dissolve into the sauce.

Step 10

Add grated cheddar cheese and stir until melted.

Step 11

Mix in the hot sauce to taste, adjusting for spice preferences.

Step 12

Finally, add the green peas and cook for another 2 minutes before serving.

Step 13

Serve hot with steamed rice.
