Ingredients

  • 1 lb Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Red enchilada sauce
  • 8 medium Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 2 tbsp Fresh cilantro, chopped (optional for garnish)
  • 4 tbsp Sour cream (optional for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess fat from the skillet.

Step 3

Add the diced onion and minced garlic to the skillet. Cook until the onion softens, about 3 minutes.

Step 4

Stir in the black beans, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant. Remove the mixture from heat.

Spread 1/2 cup of the red enchilada sauce on the bottom of a 9x13-inch baking dish.

Lay out a flour tortilla on a clean surface. Spoon about 1/4 cup of the beef and bean mixture down the center of the tortilla. Sprinkle with a small handful of shredded cheese (about 2 tablespoons). Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.

Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the top with the remaining shredded cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake uncovered for an additional 10 minutes until the cheese is melted and bubbly.

Remove the enchiladas from the oven and let rest for 5 minutes. Garnish with chopped cilantro, if desired.
