Ingredients

  • 250 grams Green beans
  • 2 tablespoons Coconut oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Urad dal
  • 0.5 teaspoon Cumin seeds
  • 2 Dry red chilies
  • 10 leaves Curry leaves
  • 1 small Onion
  • 0.25 teaspoon Turmeric powder
  • 3 tablespoons Grated coconut
  • 0.5 teaspoon Salt
  • 2 tablespoons Water

Directions

Step 1

Wash the green beans thoroughly and cut them into small, uniform pieces.

Step 2

Heat the coconut oil in a pan over medium heat.

Step 3

Add the mustard seeds and let them splutter.

Step 4

Add the urad dal and cumin seeds, stirring until the urad dal turns golden brown.

Step 5

Break the dry red chilies and add them to the pan along with the curry leaves. Sauté for a few seconds until the chilies are slightly toasted.

Step 6

Peel and finely chop the onion. Add the chopped onion to the pan and sauté until they are translucent.

Step 7

Add the chopped green beans to the pan and stir well to combine with the spices.

Sprinkle the turmeric powder over the beans, mix well, and cover the pan with a lid. Allow it to cook on low heat for about 5 minutes.

Add the water and salt, stir well, and cook covered for another 5-7 minutes, stirring occasionally, until the beans are tender.

Once the beans are cooked and the water has evaporated, add the grated coconut to the pan. Mix well to combine.
