Ingredients

  • 200 grams Bean thread (glass) noodles
  • 1 large Carrot
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 0.5 cup Fresh cilantro
  • 3 stalks Green onion
  • 0.25 cup Roasted peanuts
  • 3 tablespoons Soy sauce
  • 2 tablespoons Sesame oil
  • 3 tablespoons Lime juice
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 1 teaspoon Fresh ginger
  • 0.25 teaspoon Crushed red pepper flakes

Directions

Step 1

Place the bean thread noodles in a heatproof bowl and cover them with boiling water. Allow them to sit for 5 minutes or until softened. Drain, rinse with cold water, and set aside.

Peel and julienne the carrot. Julienne the cucumber and red bell pepper as well. Roughly chop the cilantro and thinly slice the green onions.
