Ingredients

  • 15 ounces Canned cannellini beans (drained and rinsed)
  • 6 slices Cooked bacon (crisply chopped)
  • 4 ounces Blue cheese (crumbled)
  • 1 cup Sour cream
  • 4 ounces Cream cheese (softened)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Fresh parsley (chopped, optional garnish)
  • 1 tablespoon Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 assorted servings Vegetables, crackers, or bread (for serving)

Directions

Step 1

In a large pan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Remove from heat and set aside.

Step 2

In a food processor, combine the cannellini beans, sour cream, cream cheese, sautéed garlic, salt, and black pepper. Blend until smooth and creamy, scraping down the sides if necessary.

Step 3

Transfer the bean mixture to a medium oven-safe dish or skillet. Stir in half of the crumbled blue cheese and half of the chopped bacon.

Step 4

Top the dip with the remaining blue cheese and bacon for added texture and flavor.

Step 5

Preheat your oven to 375°F (190°C) and bake the dip for 10 minutes, or until it is hot and bubbling around the edges.

Step 6

Remove from the oven and let it cool slightly. Garnish with freshly chopped parsley for a pop of color, if desired.

Step 7

Serve warm with your choice of vegetables, crackers, or toasted bread slices.
