Ingredients

  • 3 cups Cooked shredded pork
  • 1.5 cups BBQ sauce
  • 8 large Flour tortillas
  • 2 cups Shredded cheddar cheese

  • 2 whole Garlic cloves, minced
  • 1 cup Tomato sauce
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 stalks Green onions, sliced (optional garnish)
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and sauté for another 1 minute.

Stir in the tomato sauce, chili powder, cumin, salt, and black pepper. Let the mixture simmer for 5 minutes, then remove from heat.
