Ingredients

  • 500 grams Potatoes
  • 2 pieces Green chilies
  • 1 inch Ginger
  • 3 pieces Garlic cloves
  • 3 tablespoons Coriander leaves
  • 0.5 teaspoons Turmeric powder
  • 0.5 teaspoons Mustard seeds
  • 0.25 teaspoons Asafoetida
  • 8 pieces Curry leaves
  • 1 teaspoons Salt
  • 1 tablespoon Oil
  • 1 cup Chickpea flour (Besan)
  • 0.5 teaspoons Red chili powder
  • 0.25 teaspoons Baking soda
  • 0.75 cup Water
  • 0 as needed Oil for frying

Directions

Step 1

Boil potatoes in a large pot until tender, about 10 minutes. Drain, peel, and mash them.

Step 2

Finely chop green chilies and ginger. Crush garlic cloves.

Step 3

Heat 1 tablespoon of oil in a pan. Add mustard seeds and let them splutter.

Add asafoetida, curry leaves, green chilies, ginger, and crushed garlic. Sauté for 2 minutes.

Add turmeric powder and chopped coriander leaves. Mix well.
