Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 2 medium carrots
  • 2 medium celery stalks
  • 3 cloves garlic cloves
  • 3 medium potatoes
  • 1 cup pearl barley
  • 6 cups vegetable broth
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Dice the onion, carrots, and celery. Mince the garlic. Add the onion, carrots, and celery to the pot, and sauté for 5 minutes, stirring occasionally, until softened. Add the garlic and sauté for 1 more minute.
