Ingredients

  • 1 lb stew beef (or inexpensive beef cuts like chuck)
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp cooking oil (vegetable or canola)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 large russet potatoes, peeled and cubed
  • 2 stalks celery, sliced
  • 14.5 oz canned diced tomatoes (with juice)
  • 4 cups beef broth (or water with beef bouillon)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 leaf bay leaf
  • 1 cup frozen peas

Directions

Step 1

In a large bowl, toss the stew beef with the flour, salt, and black pepper until the meat is evenly coated.

Step 2

Heat the cooking oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches and brown on all sides. Remove the browned beef and set it aside.

Step 3

In the same pot, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.

Step 4

Return the browned beef to the pot. Stir in the carrots, potatoes, celery, canned diced tomatoes (with their juice), and beef broth. Mix well.

Step 5

Add the dried thyme, dried rosemary, and bay leaf to the pot. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 1.5 to 2 hours, stirring occasionally.

Step 6

About 10 minutes before serving, stir in the frozen peas and cook until heated through.

Step 7

Remove the bay leaf before serving. Taste and adjust seasoning with additional salt and pepper if needed.

Step 8

Serve hot with bread or crackers, and enjoy a hearty, frugal meal!
