Ingredients

  • 4 pieces baguette
  • 1 lb pork tenderloin or chicken breast
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp honey
  • 3 pieces garlic cloves, minced
  • 0.5 tsp ground black pepper
  • 1 cup carrot, julienned
  • 1 cup daikon radish, julienned
  • 2 tbsp granulated sugar
  • 0.5 cup white vinegar
  • 0.5 cup boiling water
  • 0.5 cup mayonnaise
  • 1 tbsp sriracha
  • 1 cup fresh cilantro
  • 1 piece jalapeño, thinly sliced
  • 1 piece cucumber, thinly sliced

Directions

Step 1

In a medium bowl, mix soy sauce, fish sauce, honey, minced garlic, and black pepper to create a marinade. Add pork tenderloin or chicken breast to the marinade, cover, and refrigerate for at least 30 minutes or up to 4 hours.

Step 2

While the meat marinates, prepare the pickled vegetables. In a small bowl, mix sugar, white vinegar, and boiling water until the sugar dissolves. Add the julienned carrots and daikon radish to the mixture and let them pickle for at least 15 minutes.

Step 3

Heat a grill pan or skillet over medium-high heat. Remove the pork or chicken from the marinade and cook for about 4-5 minutes per side, or until fully cooked and slightly charred. Let the meat rest for 5 minutes before slicing it thinly.

Step 4

In a small bowl, mix mayonnaise and sriracha to create a spicy mayo spread.

Step 5

Split the baguettes lengthwise, leaving one side slightly attached, and toast them lightly if desired.

Step 6

Spread the spicy mayo on both sides of each baguette. Layer the sliced pork or chicken, pickled vegetables, sliced cucumber, jalapeño, and fresh cilantro inside the baguette.

Step 7

Serve the banh mi sandwiches immediately and enjoy!
