Ingredients

  • 2 whole ripe bananas
  • 50 grams granulated sugar
  • 4 whole large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 15 grams all-purpose flour
  • 10 grams unsalted butter
  • 5 grams powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 200°C (390°F) and place a baking sheet on the middle rack to heat.

Step 2

Butter the inside of four ramekins (about 7-8 cm in diameter) and dust lightly with granulated sugar. Set aside.

Step 3

Peel the bananas and mash them in a bowl until smooth. Add the vanilla extract and lemon juice and mix until combined.

Step 4

Separate the egg yolks from the whites. Place the yolks in one bowl and the whites in another clean, dry bowl.

Step 5

Add the mashed bananas and flour to the egg yolks and whisk until smooth.

Step 6

Using an electric mixer, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until the whites are glossy and form stiff peaks.

Step 7

Fold one-third of the beaten egg whites into the banana mixture to lighten it. Gently fold in the remaining egg whites in two batches, taking care not to deflate the mixture.

Step 8

Divide the soufflé mixture evenly among the prepared ramekins, filling them about three-quarters full. Level the tops with a spatula and run your thumb around the inside edge of each ramekin to help the soufflés rise evenly.

Step 9

Place the ramekins on the preheated baking sheet and bake for 12-15 minutes, or until the soufflés have risen well and are golden on top.

Step 10

Remove the soufflés from the oven and dust with powdered sugar before serving immediately.
