Ingredients

  • 4 pieces bananas
  • 200 grams chocolate (dark, milk, or white)
  • 1 tablespoon coconut oil
  • 0.5 cups sprinkles, crushed nuts, or shredded coconut (optional toppings)
  • 8 pieces popsicle sticks
  • 1 sheet parchment paper

Directions

Step 1

Peel the bananas and cut each banana in half crosswise, so you end up with 8 banana pieces total.

Step 2

Insert a popsicle stick into the flat, cut end of each banana piece, being careful not to push the stick all the way through. Set aside.

Step 3

Line a baking tray with parchment paper to prevent sticking.

Step 4

In a microwave-safe bowl, combine the chocolate and coconut oil, and microwave in 20-30 second increments, stirring between each increment until the chocolate is fully melted and smooth. Alternatively, you can melt the chocolate using a double boiler on the stovetop.

Step 5

Hold a banana pop by the stick and dip it into the melted chocolate, evenly coating it. Allow any excess chocolate to drip off.

Step 6

Immediately sprinkle your desired toppings (sprinkles, nuts, shredded coconut, etc.) onto the chocolate-covered banana pop while the chocolate is still wet.

Step 7

Place each finished banana pop on the parchment-lined tray. Repeat until all the banana pieces are coated.

Step 8

Put the tray in the freezer for at least 1 hour or until the chocolate is completely set and the bananas are frozen.

Step 9

Once frozen, serve and enjoy! Store any leftover banana pops in an airtight container in the freezer for up to 1 week.
