Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 0.25 teaspoon salt
  • 2 ripe bananas
  • 1 egg
  • 0.75 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt. Set aside.

Step 2

In a separate bowl, mash the ripe bananas using a fork until smooth. Add the egg, milk, and vanilla extract to the mashed bananas and whisk until combined.

Step 3

Melt the butter in a small saucepan over low heat, or microwave it for about 15 seconds until completely melted. Let it cool slightly.

Step 4

Pour the melted butter into the banana mixture and stir to combine.

Step 5

Make a well in the center of the dry ingredients and pour in the wet ingredients. Gently stir the mixture until it becomes a smooth batter. Be careful not to overmix.

Step 6

Heat a non-stick griddle or frying pan over medium heat. Lightly grease the pan with vegetable oil.

Step 7

Using a 1/4 cup measuring cup, scoop the batter onto the hot pan, forming pancakes. Cook until small bubbles form on the surface, about 2 to 3 minutes.

Step 8

Flip the pancakes and cook the other side until golden brown, approximately 2 more minutes.

Step 9

Repeat with the remaining batter, adding more oil if necessary.

Step 10

Serve the banana pancakes warm, topped with your favorite syrup, fresh fruit, or a dusting of powdered sugar.
