Ingredients

  • 3 pieces Ripe bananas
  • 2 cups Whole milk
  • 4 pieces Egg yolks
  • 0.5 cup Granulated sugar
  • 2 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 1 tablespoon Butter
  • 20 pieces Vanilla wafer cookies
  • 1 cup Whipped cream (optional)

Directions

Step 1

Peel and slice the ripe bananas into thin rounds, and set them aside.

Step 2

In a medium saucepan, whisk together the sugar, cornstarch, and salt.

Step 3

Slowly add the milk while whisking to ensure no lumps form, then place the saucepan on medium heat.

Step 4

In a separate bowl, lightly beat the egg yolks.

Step 5

As the milk mixture begins to warm, take 1/2 cup of the hot milk mixture and gradually whisk it into the egg yolks to temper them.

Step 6

Slowly pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture, whisking constantly.

Step 7

Continue cooking over medium heat, whisking constantly, until the custard thickens, about 5–7 minutes. It should coat the back of a spoon.

Step 8

Remove the saucepan from heat and stir in the vanilla extract and butter until well combined.

Step 9

In a serving dish or individual cups, layer the vanilla wafer cookies at the bottom.

Step 10

Add a layer of sliced bananas, followed by a layer of the warm custard. Repeat the layers as desired, ending with custard on top.

Step 11

Cover the dish with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming.

Step 12

Refrigerate for at least 2 hours to allow the pudding to set.

Step 13

Before serving, top with whipped cream and additional banana slices or crumbled vanilla wafers, if desired.
