Ingredients

  • 2 pieces ripe bananas
  • 4 tablespoons unsalted butter
  • 1 cup water
  • 1 cup all-purpose flour
  • 0.25 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 0.5 cup sugar
  • 2 cups vegetable oil
  • 2 large eggs

Directions

Step 1

Peel the ripe bananas and mash them in a bowl until smooth. Set aside.

Step 2

In a medium saucepan, combine the unsalted butter, water, and salt. Heat over medium heat until the butter is melted and the mixture begins to simmer.

Step 3

Reduce the heat to low and add the all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat.

Step 4

Allow the dough to cool slightly for about 3-4 minutes. Then add the mashed bananas and mix thoroughly until combined.

Step 5

Add the eggs, one at a time, mixing well after each addition until the dough is smooth and glossy.

Step 6

Heat the vegetable oil in a deep, heavy-bottomed pot or skillet to 350°F (175°C). Line a plate with paper towels to drain the churros after frying.

Step 7

Transfer the dough to a piping bag fitted with a star-shaped tip.

Step 8

Carefully pipe 4- to 5-inch lengths of dough directly into the hot oil, using scissors or a knife to cut the dough as you go. Fry 3-4 churros at a time to avoid overcrowding the pot.

Step 9

Fry each churro for about 2-3 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and place on the prepared plate to drain.

Step 10

In a small bowl, mix the sugar and ground cinnamon together.

Step 11

While the churros are still warm, roll them in the cinnamon sugar mixture until fully coated.

Step 12

Serve warm with your favorite dipping sauces, such as melted chocolate or caramel.
