Ingredients

  • 180 grams all-purpose flour
  • 115 grams unsalted butter (chilled and diced)
  • 50 grams granulated sugar
  • 1 egg yolk
  • 2 tablespoons cold water
  • 2 bananas (ripe)
  • 250 milliliters milk
  • 15 grams cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
  • 200 grams mixed fresh berries (e.g., strawberries, blueberries, raspberries)
  • 1 tablespoon powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

In a large bowl, mix the all-purpose flour and granulated sugar. Add the chilled, diced butter, and rub using your fingertips until the mixture resembles coarse breadcrumbs.

Step 3

Add the egg yolk and cold water to the flour mixture. Stir until the dough begins to come together. Gently shape it into a disk, wrap in plastic wrap, and chill in the refrigerator for 15 minutes.

Step 4

Lightly flour your work surface and roll out the chilled dough to about 1/8-inch thickness. Cut circles slightly larger than your mini tart pans, then press the circles into the pans, trimming any excess dough.

Step 5

Prick the bottom of the tart shells with a fork to prevent puffing. Line each shell with a piece of parchment paper and fill with pie weights or dried beans.

Step 6

Bake the tart shells in the preheated oven for 10 minutes, then remove the parchment and weights. Bake for an additional 5 to 7 minutes, until lightly golden. Set aside to cool completely.

Step 7

To make the banana custard, slice the bananas and puree them in a blender or food processor until smooth.

Step 8

In a medium saucepan, whisk together the milk, cornstarch, honey or maple syrup, and vanilla extract. Heat over medium heat, stirring constantly, until the mixture begins to thicken.

Step 9

Reduce the heat to low and stir in the banana puree. Continue stirring until the custard thickens further and is smooth. Remove it from heat and allow it to cool to room temperature.

Step 10

Once the tart shells and banana custard are cool, fill each tart shell with the custard, smoothing the top with the back of a spoon.

Step 11

Top the tarts with an assortment of fresh mixed berries for a vibrant and flavorful finish.

Step 12

Dust with powdered sugar for garnish, and serve immediately or refrigerate until ready to enjoy.
