Ingredients

  • 1.5 cups Bran cereal
  • 1 cup Milk
  • 2 medium Bananas
  • 1 medium Apple
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.25 cup Honey
  • 0.25 cup Vegetable oil
  • 1 cup Whole wheat flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly with cooking spray.

Step 2

In a medium bowl, combine the bran cereal and milk. Let the mixture sit for 5 minutes to soften the cereal.

Step 3

While the bran cereal is soaking, peel and mash the bananas in a large mixing bowl. Core the apple and finely dice it into small pieces.

Step 4

Add the softened bran cereal mixture to the mashed bananas in the large bowl. Stir in the diced apple, egg, vanilla extract, honey, and vegetable oil until well combined.

Step 5

In a separate medium bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.

Step 6

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; the batter will be slightly lumpy.

Step 7

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 8

Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
