Ingredients

  • 500 grams Lamb shoulder, cut into cubes
  • 1 large Onion, diced
  • 4 Garlic cloves, minced
  • 500 grams Fresh okra, trimmed
  • 3 tablespoons Tomato paste
  • 400 grams Canned chopped tomatoes
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground cinnamon
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 500 milliliters Water or beef broth
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoons Fresh coriander leaves, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat. Add the lamb cubes and sear until browned on all sides. Remove the lamb from the pot and set aside.

In the same pot, add the diced onion and sauté until they are translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

Add the trimmed okra to the pot and sauté for 5 minutes, stirring occasionally until it starts to soften.
