Ingredients

  • 2 pieces Boneless, skinless chicken breasts

  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 0.25 cup Balsamic vinegar
  • 2 tablespoons Honey
  • 1 tablespoon Low-sodium soy sauce
  • 0.25 cup Chicken broth
  • 12 ounces Spaghetti or linguine noodles
  • 2 cups Baby spinach
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook for 4-5 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet, let it rest for 5 minutes, and then slice into strips.
