Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 8 ounces Cremini mushrooms, sliced
  • 3 cloves Garlic, minced
  • 0.25 cup Balsamic vinegar
  • 0.5 cup Chicken broth
  • 1 tablespoon Honey
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Fresh parsley, chopped (optional)

Directions

Step 1

Season both sides of the chicken breasts with salt, pepper, and garlic powder.

Step 2

Heat olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the butter and let it melt. Stir in the sliced mushrooms and cook for 5-7 minutes until the mushrooms are tender and golden, stirring occasionally.

Step 4

Add the minced garlic to the skillet and sauté for 1 minute, or until fragrant.

Step 5

Pour in the balsamic vinegar and chicken broth. Add the honey and thyme, stirring to combine. Let the sauce simmer for 2-3 minutes to slightly reduce.

Step 6

Return the chicken breasts to the skillet, spoon some sauce over them, and reduce the heat to low. Cover and cook for 7-10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 7

Remove the skillet from heat and garnish with freshly chopped parsley if desired. Serve warm with your choice of sides, such as mashed potatoes, rice, or a fresh green salad.
