Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 0.25 cups balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 3 pieces garlic cloves (minced)
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 12 ounces penne pasta
  • 1.5 cups cherry tomatoes (halved)
  • 2 cups baby spinach
  • 0.5 cups Parmesan cheese (grated)
  • 4 cups water

Directions

Step 1

Slice the chicken breasts into thin strips and set aside.

Step 2

In a medium bowl, whisk together the balsamic vinegar, olive oil, honey, minced garlic, Italian seasoning, salt, and black pepper to create the marinade.

Pour half of the marinade over the chicken strips and let it marinate for at least 15 minutes. Reserve the other half of the marinade for later use.

While the chicken marinates, bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
