Ingredients

  • 4 pounds Bone-in beef short ribs
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 2 medium Carrots, sliced
  • 2 medium Celery stalks, sliced
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Tomato paste
  • 1 cup Balsamic vinegar
  • 2 cups Beef broth
  • 2 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 2 leaves Bay leaves

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Season the short ribs generously with salt and black pepper on all sides.

Step 3

Heat the olive oil in a large Dutch oven or heavy-bottomed oven-safe pot over medium-high heat.

Step 4

Sear the short ribs in batches until deeply browned on all sides, about 3–4 minutes per side. Remove and set aside.

Add the diced onions, carrots, and celery to the pot. Cook for 5–7 minutes, stirring occasionally, until the vegetables are softened and beginning to brown.

Stir in the minced garlic and tomato paste, cooking for another 1–2 minutes until fragrant.
