Ingredients

  • 1 kg Mutton (preferably with bones)
  • 6 cups Water
  • 1 Onion (large, thinly sliced)
  • 6 Garlic cloves (crushed)
  • 2 tablespoons Ginger (grated)
  • 2 teaspoons Salt
  • 1 teaspoon Black peppercorns
  • 4 Green chilies (whole)
  • 2 tablespoons Coriander leaves (chopped)
  • 2 tablespoons Oil

Directions

Step 1

Wash the mutton pieces thoroughly and set them aside to drain.

Step 2

In a large pot, heat the oil over medium heat.

Step 3

Add the thinly sliced onion and sauté until golden brown.

Step 4

Add the crushed garlic and grated ginger to the pot. Stir and cook for 1-2 minutes until aromatic.

Step 5

Add the mutton pieces to the pot and stir to coat the meat in the onion, garlic, and ginger mixture. Cook for about 10 minutes, stirring occasionally.

Step 6

Pour in 6 cups of water, ensuring that the mutton is fully submerged. Bring the mixture to a boil.

Step 7

Once boiling, reduce the heat to low and add salt and black peppercorns. Cover the pot and let it simmer gently for about 90 minutes, or until the mutton becomes tender.

Step 8

After 90 minutes, add the whole green chilies to the pot. Cover again and let it cook for an additional 20-30 minutes.

Step 9

Taste and adjust seasoning if necessary.

Step 10

Once the mutton is fully cooked and the broth has developed a rich flavor, remove from heat.

Step 11

Garnish with chopped coriander leaves and serve hot with naan or steamed rice.
