  • 1 cup Corn kernels (frozen or fresh)
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Shredded cheddar cheese
  • 6 pieces Large flour tortillas
  • 0.5 cup Salsa (for serving)
  • 0.5 cup Sour cream (for serving)
  • 2 tablespoons Chopped cilantro (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 2-3 minutes until softened.
