Ingredients

  • 8 oz cream cheese
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 0.5 red bell pepper, diced
  • 0.5 cup zucchini, diced
  • 0.25 cup carrot, grated
  • 1 cup fresh spinach, chopped
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish or casserole dish with a light coating of olive oil.

Step 2

In a mixing bowl, beat together the cream cheese, sour cream, shredded mozzarella, shredded cheddar, and Parmesan cheese until well combined. Set aside.

Step 3

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic, diced red bell pepper, diced zucchini, and grated carrot. Sauté for 5-6 minutes, until the vegetables are softened.

Step 4

Add the chopped spinach to the skillet and cook for another 1-2 minutes, until wilted. Remove the skillet from the heat.

Step 5

Gently fold the cooked vegetable mixture into the cheese mixture. Season with salt and black pepper, stirring until evenly combined.

Step 6

Transfer the mixture to the prepared baking dish, spreading it out evenly. If desired, sprinkle paprika over the top for added color and flavor.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the dip is bubbly and golden on top.

Step 8

Remove from the oven and let the dip rest for 5 minutes before serving. Serve warm with crackers, pita chips, or fresh vegetable sticks.
