Ingredients

  • 6 large ripe tomatoes
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 medium onion
  • 1 cup dry breadcrumbs
  • 1 cup parmesan cheese
  • 1 cup mozzarella cheese
  • 0.5 cup fresh basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9 x 13-inch baking dish with olive oil or cooking spray.

Step 2

Slice the ripe tomatoes into 1/2-inch thick slices and set aside on a plate.

Step 3

Mince the garlic cloves and finely dice the onion.

Step 4

In a medium skillet, heat the olive oil over medium heat, then sauté the garlic and onion until soft and fragrant, about 3-4 minutes. Remove from heat and let cool slightly.

In a mixing bowl, combine the breadcrumbs, parmesan cheese, sautéed garlic and onion, oregano, salt, and black pepper. Mix until well combined.
