Ingredients

  • 6 medium Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Cheddar cheese, shredded
  • 6 slices Cooked bacon, crumbled
  • 3 stalks Green onions, sliced
  • 1 cup Sour cream (for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.

Step 2

Scrub the potatoes thoroughly under cold water and pat them dry. Pierce each potato a few times with a fork to allow steam to escape during baking.

Step 3

Place the potatoes directly on the oven rack or on the prepared baking sheet. Bake for 45-50 minutes, or until the potatoes are tender and the skin is crisp.

Remove the potatoes from the oven and let them cool for about 10 minutes, just enough to handle safely.

Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4-inch of potato attached to the skin. (Set aside the scooped potato for another use, like mashed potatoes.)
