Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Trim the bottoms slightly if needed to make them stand upright, but be careful not to cut a hole.
Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 2-3 minutes.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Add the ground beef or turkey to the skillet. Break it apart with a spatula and cook until browned and fully cooked through, about 5-7 minutes. Drain excess grease if necessary.
