Ingredients

  • 4 large bell peppers
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 medium, diced onion
  • 2 minced garlic cloves
  • 1 cup tomato sauce
  • 1 14-ounce can diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup water

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Trim the bottoms slightly if needed to make them stand upright, but be careful not to cut a hole.

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 2-3 minutes.

Add the minced garlic and cook for an additional 1 minute until fragrant.
