Ingredients

  • 4 whole artichokes
  • 1 whole lemon
  • 1.5 cups breadcrumbs
  • 0.75 cups Parmesan cheese (grated)
  • 0.25 cups fresh parsley (chopped)
  • 2 whole garlic cloves (minced)
  • 0.25 cups olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups vegetable broth or water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Trim the artichokes by slicing off the top inch and cutting off the stem so they can sit flat. Remove tough, outer leaves and use scissors to snip the sharp tips of the remaining ones.

Step 3

Rub the cut surfaces with the lemon to prevent browning.

Step 4

In a mixing bowl, combine breadcrumbs, Parmesan cheese, parsley, minced garlic, olive oil, salt, and black pepper. Stir until evenly combined.

Step 5

Gently pry the artichoke leaves apart, starting from the center, to create space for the stuffing. Be careful not to break the leaves.

Step 6

Stuff the breadcrumb mixture between the leaves of each artichoke, pressing it in lightly with your fingers.

Step 7

Place the stuffed artichokes upright in a baking dish. Pour vegetable broth or water into the dish, ensuring it's about 1 inch deep.

Step 8

Cover the dish tightly with foil to create steam and bake for 45 minutes.

Step 9

Uncover the dish and bake for an additional 15 minutes to allow the tops to brown slightly.

Step 10

Remove the dish from the oven and let the artichokes cool briefly before serving. Optionally, garnish with extra parsley or a drizzle of olive oil.
