Ingredients

  • 4 whole Ripe tomatoes
  • 200 grams Smoked mozzarella
  • 8 whole Fresh basil leaves
  • 2 tablespoons Olive oil
  • 1 teaspoon Freshly ground black pepper
  • 0.5 teaspoons Salt
  • 1 tablespoon Balsamic glaze
  • 2 whole Garlic cloves (minced)
  • 2 tablespoons Bread crumbs (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the tomatoes thoroughly, then slice off the tops (about 1/4 inch) and scoop out the seeds and core using a small spoon to create a bowl-like cavity.

Step 3

Lightly sprinkle the insides of the tomatoes with salt and place them upside down on a plate lined with paper towels to drain for about 5 minutes.

Step 4

Meanwhile, slice the smoked mozzarella into small cubes that will fit comfortably inside the tomatoes without overflowing.

Step 5

Place the hollowed-out tomatoes upright in a baking dish greased with 1 tablespoon of olive oil.

Step 6

Divide the minced garlic equally among the tomatoes, followed by the smoked mozzarella cubes. Press the mozzarella gently into each tomato.

Step 7

Top each stuffed tomato with a whole basil leaf. Optionally, sprinkle the tops with bread crumbs for added crunch.

Step 8

Drizzle the remaining 1 tablespoon of olive oil evenly over the tomatoes.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the tomatoes are tender but still hold their shape and the mozzarella is melted and bubbling.

Step 10

Remove the baking dish from the oven and let the tomatoes cool slightly for 2-3 minutes.

Step 11

Drizzle the baked tomatoes with balsamic glaze and garnish with freshly ground black pepper before serving.

Step 12

Serve warm as an appetizer or a side dish. Enjoy!
