  • 0.5 tsp Black pepper
  • 0.25 cup Cotija cheese (crumbled, optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the tomatillos, cherry tomatoes, red onion, garlic, and jalapeño. Drizzle with 2 tablespoons of olive oil and sprinkle with cumin, paprika, salt, and black pepper. Toss to evenly coat the vegetables.
