Ingredients

  • 2 cups Basmati rice
  • 1 pinch Saffron threads
  • 3 tablespoons Warm water
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium (finely chopped) Onion
  • 2 cloves (minced) Garlic
  • 1 whole Cinnamon stick
  • 4 whole Cardamom pods
  • 3.5 cups Vegetable broth
  • 1 teaspoon Salt
  • 1 whole Bay leaf
  • 0.25 cup Golden raisins
  • 0.25 cup (toasted) Slivered almonds
  • 2 tablespoons (chopped, for garnish) Fresh parsley

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Set aside to drain.

Step 3

In a small bowl, combine the saffron threads with 3 tablespoons of warm water. Let the saffron steep for at least 10 minutes to release its color and flavor.

Step 4

Heat a large oven-safe pot or Dutch oven over medium heat. Add the butter and olive oil, allowing them to melt and combine.

Step 5

Add the finely chopped onion and sauté for 4-5 minutes until translucent. Then add the minced garlic, and cook for another minute until fragrant.

Step 6

Stir in the cinnamon stick, cardamom pods, and bay leaf, cooking for an additional 1 minute to toast the spices.

Step 7

Add the drained basmati rice to the pot and stir to coat the grains in the butter and spices. Cook for 2 minutes to lightly toast the rice.

Step 8

Pour in the vegetable broth, the saffron water (including the threads), and salt. Stir gently to combine.

Step 9

Bring the mixture to a gentle boil, then cover the pot tightly with a lid or foil.

Step 10

Transfer the covered pot to the preheated oven and bake for 30 minutes, or until the liquid is fully absorbed and the rice is tender.

Step 11

Once done, remove the pot from the oven and let it sit, covered, for 5-10 minutes to allow the rice to steam.

Step 12

Fluff the rice gently with a fork and stir in the golden raisins and toasted slivered almonds.

Step 13

Garnish with freshly chopped parsley before serving. Serve warm and enjoy!
