Ingredients

  • 4 medium Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Shredded cheddar cheese
  • 4 strips Cooked bacon, crumbled
  • 0.5 cup Sour cream
  • 2 stalks Green onions, sliced

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes clean and dry them with a kitchen towel.

Step 3

Pierce each potato several times with a fork to allow steam to escape during baking.

Step 4

Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a fork.

Remove the potatoes from the oven and let them cool for 10 minutes, or until they’re safe to handle.

Cut each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4-inch of potato inside the skin. Save the scooped-out flesh for another use, like mashed potatoes.
