Ingredients

  • 6 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 4 tablespoons Butter
  • 1 cup Sour cream
  • 1.5 cups Cheddar cheese, shredded
  • 6 slices Bacon, cooked and crumbled
  • 0.5 cup Green onions, sliced
  • 1 cup Steamed broccoli florets
  • 2 cups Chili (optional)
  • 0 Salt and pepper to taste

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes thoroughly under running water and pat them dry with a clean towel.

Step 3

Pierce each potato several times with a fork, then lightly rub the skin with olive oil and sprinkle with salt to taste.

Step 4

Place the potatoes directly on the oven rack or on a baking sheet lined with foil, and bake for 60-70 minutes, or until the skins are crispy and a fork easily pierces the center of each potato.

Step 5

While the potatoes are baking, prepare the toppings. Set up a buffet-style topping station with bowls of butter, sour cream, shredded cheddar cheese, crumbled bacon, sliced green onions, steamed broccoli florets, and optional chili.

Step 6

Once the potatoes are fully cooked, remove them from the oven and allow them to cool slightly for 5-10 minutes.

Step 7

To serve, make a lengthwise slit on each potato and gently press the ends together to open up the center.

Step 8

Let your guests customize their baked potatoes with their favorite toppings. Provide additional salt and pepper for seasoning as desired.
