  • 6 ounces tomato paste
  • 14.5 ounces canned tomatoes
  • 6 cups fish stock
  • 1 teaspoon thyme
  • 1 tablespoon parsley
  • 1 bay leaf
  • 0.5 teaspoon crushed red pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Clean the conch meat thoroughly and tenderize it using a meat mallet. Chop into small, bite-sized pieces.

Place the chopped conch meat in a bowl. Squeeze the juice of one lime over the conch to help tenderize and remove any fishy taste. Set aside.

Heat olive oil in a large pot over medium heat.
