Ingredients

  • 6 whole Eggs
  • 6 slices Bacon
  • 1 cup Cheddar cheese
  • 1 cup Cottage cheese
  • 0.25 cup Heavy cream
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chives

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare a muffin tin by spraying it with non-stick cooking spray or lining it with silicone muffin liners.

Step 2

Place the bacon slices on a baking sheet and cook them in the preheated oven for about 10 minutes, or until crisp. Once cooked, remove them from the oven and let them cool slightly, then chop them into small pieces.

Step 3

In a blender, combine the eggs, cottage cheese, heavy cream, salt, and black pepper. Blend until the mixture is smooth and well combined.

Step 4

In a medium bowl, mix the chopped bacon, grated cheddar cheese, and chives together.

Step 5

Evenly distribute the bacon and cheese mixture into the prepared muffin tin.

Step 6

Pour the blended egg mixture over the bacon and cheese in each muffin cup, filling them about three-quarters full.

Step 7

Place the muffin tin in the oven and bake for 20 to 25 minutes, or until the egg bites are set and slightly golden on top.

Step 8

Allow the bacon egg bites to cool in the tin for a few minutes before removing them to serve immediately, or let them cool completely for storage.

Step 9

Store any leftover egg bites in an airtight container in the refrigerator for up to 4 days. They can also be frozen for up to 1 month.
