Ingredients

  • 4 pieces bacon strips
  • 2 count large eggs
  • 2 slices cheese slices (cheddar or American)
  • 2 count sandwich buns
  • 2 tablespoons unsalted butter
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon cooking oil

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Step 2

Add the bacon strips to the skillet and cook for about 4-5 minutes on each side, or until they are crispy to your liking. Remove the bacon from the skillet and place on a paper towel-lined plate to drain excess grease.

Step 3

Carefully drain any excess bacon fat from the skillet, leaving about a teaspoon. Add half of the cooking oil if necessary.

Step 4

While the bacon is cooking, slice your sandwich buns in half and lightly butter the cut sides with 1 tablespoon of butter.

Step 5

In a clean skillet, toast the buttered buns over medium heat, cut side down, until golden and crispy, about 2-3 minutes. Set aside.

Step 6

Return the non-stick skillet to the stove over medium-low heat, add the remaining tablespoon of cooking oil if needed.

Step 7

Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and black pepper.

Step 8

Cook the eggs to your desired doneness, about 2-3 minutes for sunny side up or flip for an additional minute for over easy.

Step 9

Turn off the heat and lay a slice of cheese over each egg. Cover the skillet with a lid or foil to let the cheese melt, about 30 seconds to 1 minute.

Step 10

To assemble the sandwich, place two bacon strips on the bottom half of each toasted bun.

Step 11

Gently lift the cheesy egg and place it on top of the bacon.

Step 12

Top each egg with the other half of the toasted bun.

Step 13

Serve immediately and enjoy your delicious bacon, egg, and cheese sandwich.
