Ingredients

  • 2 racks Pork spare ribs
  • 3 tablespoons Brown sugar
  • 2 tablespoons Paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 0.5 cup Apple cider vinegar
  • 1 cup Barbecue sauce
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your grill to 250°F (120°C) or prepare your smoker for low and slow cooking.

Step 2

Remove the membrane from the back of the pork ribs by sliding a knife underneath and pulling it off using a paper towel for grip. This allows the seasoning to penetrate better.

Step 3

In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.

Step 4

Rub the ribs generously on both sides with olive oil and the spice rub, pressing the seasonings into the meat.

Step 5

Wrap the ribs in plastic wrap and let them sit at room temperature for 30 minutes or refrigerate them for up to 8 hours for deeper flavor.

Step 6

If using a smoker, add your preferred wood (hickory, apple, or cherry wood pairs well) and place the ribs directly on the grate, bone-side down. If using a grill, set it up for indirect heat and place the ribs over the cool side of the grill.

Step 7

Cook the ribs low and slow for 3 hours, maintaining the grill or smoker temperature at around 250°F (120°C). Periodically check the ribs and replenish wood or adjust coals as needed.

Step 8

After 3 hours, remove the ribs and wrap them tightly in aluminum foil with a splash of apple cider vinegar inside the foil to help tenderize the meat. Return them to the grill or smoker and cook for an additional 1 hour.

Step 9

Carefully unwrap the ribs and brush them generously with barbecue sauce. Place them back onto the grill or smoker, directly over medium heat, to caramelize the sauce for 15–20 minutes, turning and basting frequently.

Step 10

Remove the ribs from the heat and let them rest for 10 minutes before slicing. Serve with additional barbecue sauce on the side if desired.
