Ingredients

  • 1 cup baby cereal (any kind: rice, oatmeal, or multigrain)
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 1 medium mashed ripe banana
  • 0.75 cup milk or breast milk/formula (adjust for desired consistency)
  • 1 large egg
  • 1 tablespoon unsalted butter or coconut oil (melted)
  • 0.5 teaspoon optional: vanilla extract

Directions

Step 1

In a mixing bowl, whisk together the baby cereal, all-purpose flour, baking powder, and ground cinnamon.

Step 2

In a separate bowl, mash the ripe banana until smooth, then whisk in the milk, egg, melted butter or coconut oil, and vanilla extract (if using).

Step 3

Pour the wet ingredients into the dry ingredients and stir until just combined. Allow the batter to rest for 5 minutes to soften the baby cereal and thicken the batter.

Step 4

Preheat a non-stick skillet or griddle over medium heat, and lightly grease with a small amount of butter or oil.

Step 5

Scoop 2-3 tablespoons of batter for each pancake and pour onto the skillet, forming small rounds. Spread gently if needed to flatten.

Step 6

Cook for 2-3 minutes, or until bubbles form on the surface and the edges begin to set. Flip carefully and cook for another 1-2 minutes until golden brown and cooked through.

Step 7

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 8

Let the pancakes cool slightly before serving to babies. Serve plain, with a smear of yogurt, or a drizzle of fruit puree.
