Ingredients

  • 500 grams Ground beef or turkey
  • 2 tablespoons Cooking oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 400 grams Canned diced tomatoes
  • 2 pieces Chipotle peppers in adobo sauce, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 8 small Corn tortillas
  • 2 cups Shredded cheddar or Mexican blend cheese
  • 2 tablespoons Fresh cilantro leaves, chopped
  • 0 to taste Sour cream (optional for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, warm the cooking oil and sauté the chopped onion until soft, about 3-5 minutes. Add the minced garlic and cook for another 1 minute.

Step 3

Add the ground beef or turkey to the skillet and cook until browned, breaking it up with a spatula as it cooks, about 7-8 minutes.

Step 4

Stir in the canned diced tomatoes, chipotle peppers, ground cumin, dried oregano, and salt. Let the mixture simmer for 5-7 minutes until the flavors meld and the sauce thickens slightly.

Step 5

Add the black beans and corn kernels to the skillet, stirring to combine. Cook for 2 additional minutes, then remove from heat.

Step 6

Lightly grease a deep 9x13-inch baking dish. Layer the bottom with 2-3 corn tortillas, slightly overlapping to cover the surface.

Step 7

Spread a third of the meat and bean mixture over the tortillas, then sprinkle with a third of the shredded cheese.

Step 8

Repeat the layering process two more times: tortillas, meat mixture, and cheese, ending with a layer of cheese on top.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Step 10

Remove from the oven and let the Aztec Pie cool for 5-10 minutes before serving. Garnish with fresh cilantro and serve with sour cream if desired.
