Ingredients

  • 200 grams Barley (crushed or coarse)
  • 1.5 liters Water
  • 2 tablespoons Semmen (clarified butter)
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 1 medium, diced Carrot
  • 2 tablespoons Tomato paste
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons, chopped Fresh parsley
  • 2 tablespoons, chopped Fresh cilantro

Directions

Step 1

Rinse the barley thoroughly in cold water and set aside to drain.

Step 2

In a large pot over medium heat, melt the semmen (clarified butter).

Step 3

Add the finely chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until softened and fragrant.

Add the diced carrot and continue to sauté for another 2 minutes.

Stir in the tomato paste, ground cumin, ground paprika, salt, and black pepper. Cook for 1-2 minutes to fully blend the flavors.
