Ingredients

  • 500 grams boneless chicken breast
  • 200 ml coconut milk
  • 500 ml water
  • 3 tablespoons oil
  • 5 cloves shallots
  • 3 cloves garlic
  • 3 pieces red chilies
  • 1 stalk lemongrass
  • 3 leaves kaffir lime leaves
  • 1 inch piece ginger
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 0.5 teaspoon sugar
  • 1 tablespoon lime juice

Directions

Step 1

Place the chicken breast in a pot with 500 ml of water. Bring to a boil, reduce heat, and let it simmer for 15 minutes or until cooked through.

Step 2

Remove the chicken from the pot and let it cool slightly. Shred the chicken using two forks into bite-size pieces. Set aside.

In a blender or food processor, combine shallots, garlic, red chilies, ginger, and blend until smooth.

Heat oil in a large pan over medium heat. Add the blended spice paste and sauté for about 5 minutes until fragrant.

Add the lemongrass, bruised (by smashing the stalk with the back of a knife), and kaffir lime leaves to the pan. Stir-fry briefly.
