Ingredients

  • 1 piece (approximately 1.5 kg) whole chicken
  • 5 pieces garlic cloves
  • 2 inches ginger
  • 3 pieces shallots
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 tablespoons lime juice
  • 2 tablespoons cooking oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece (white part only) lemongrass stalk
  • 100 milliliters water

Directions

Step 1

Clean the whole chicken and pat it dry. Set aside.

Step 2

In a blender or food processor, blend the garlic, ginger, shallots, turmeric, coriander, cumin, lemongrass, salt, and black pepper until it forms a smooth paste.

In a mixing bowl, combine the spice paste with sweet soy sauce, soy sauce, honey, lime juice, and cooking oil. Mix well.

Rub the marinade all over the chicken, including under the skin if possible, for extra flavor. Pour any excess marinade into the cavity of the chicken.

Cover the chicken with plastic wrap or place it in a resealable bag. Let it marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.
