Ingredients

  • 1 kg Chicken, cut into pieces
  • 400 ml Coconut milk
  • 250 ml Water
  • 2 pieces Lemongrass stalks, bruised
  • 1 teaspoon Turmeric powder
  • 3 pieces Bird's eye chili, slit
  • 2 teaspoons Salt
  • 1 teaspoon Sugar
  • 2 tablespoons Cooking oil
  • 6 pieces Shallots, sliced
  • 2 cm Ginger, sliced
  • 3 pieces Garlic cloves, minced
  • 1 piece Turmeric leaf, torn

Directions

Step 1

Begin by heating the cooking oil in a large pot over medium heat.

Step 2

Add the sliced shallots, ginger, and minced garlic to the pot. Sauté until the shallots become translucent and aromatic, about 5 minutes.

Step 3

Stir in the turmeric powder and continue to cook for another minute to fully release its aroma.

Step 4

Add in the water, bruised lemongrass stalks, and chicken pieces. Stir well to coat the chicken with spices.

Step 5

Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot partially and let it cook for 20 minutes, stirring occasionally.

Step 6

Pour in the coconut milk, slit bird's eye chilies, torn turmeric leaf, salt, and sugar. Stir to combine.

Step 7

Continue to simmer the curry for another 15-20 minutes, or until the chicken is fully cooked and tender, and the flavors have melded together.

Step 8

Taste and adjust the seasoning with more salt or sugar if needed, according to your preference.

Step 9

Once the desired taste and consistency are reached, remove from heat. Let the curry rest for a few minutes before serving.

Step 10

Serve the Ayam Masak Lemak hot with steamed rice or your favorite side dishes.
