Ingredients

  • 500 grams chicken thighs
  • 2 teaspoons turmeric powder
  • 1 teaspoon salt
  • 0.5 teaspoon white pepper
  • 3 pieces garlic cloves
  • 3 pieces shallots
  • 2 pieces red chili peppers
  • 500 ml oil (for frying)
  • 1 teaspoon coriander seeds
  • 2 pieces finger root (optional)
  • 1 piece lemongrass stalk

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and place them in a large mixing bowl.

Step 2

Add turmeric powder, salt, and white pepper to the chicken. Mix well to ensure the chicken is evenly coated with the spices. Let it marinate for about 15 minutes.

Step 3

Peel and finely chop the garlic cloves and shallots. Slice the red chili peppers diagonally.

Step 4

Crush the coriander seeds using a mortar and pestle along with the finger root (if using) to release their fragrance.

Step 5

Bruise the lemongrass stalk by tapping it gently with a rolling pin and then cut it into long pieces.

Step 6

Heat the oil in a deep frying pan over medium-high heat. Ensure that the oil is hot before frying.

Step 7

Add the chopped garlic and shallots to the oil and fry until golden brown and aromatic.

Step 8

Fry the marinated chicken pieces in batches to avoid overcrowding the pan. Fry them until they are golden brown and cooked through, about 6-7 minutes per batch.

Step 9

In the last minute of frying, add the sliced red chili peppers, crushed coriander seeds, finger root, and lemongrass to infuse the chicken with additional aroma and flavor.

Step 10

Once all the chicken pieces are fried, transfer them to a plate lined with paper towels to drain off excess oil.

Step 11

Serve the Ayam Goreng Kunyit hot with steamed rice and a side of cucumber slices or a simple salad.
